Ingredients
1/3 cup brown sugar
¾ cup sunflower oil
3 eggs (or 6 tblspns egg replacement)
1 ½ cups plain flour
1 ó teaspoons bi carb soda
1 teaspoon cinnamon
½ teaspoon ground ginger
1 tin pears (or 2 fresh pears)
¾ cup sultanas soaked overnight in tea
Method
- Preheat oven to 180C
- Beat sugar and oil together for 2 minutes with electric mixer or whisk.
- Gradually add eggs and beat well. Sift flour, baking powder, soda, cinnamon and ginger into sugar mixture.
- Add the pears and sultanas and mix until just combined. Grease and line a 22cm round cake tin.
- Cook for 50-60 minutes
