Recipe of the Month – Pear Cake

Ingredients

1/3 cup brown sugar

¾ cup sunflower oil

3 eggs (or 6 tblspns egg replacement)

1 ½ cups plain flour

1 ó teaspoons bi carb soda

1 teaspoon cinnamon

½ teaspoon ground ginger

1 tin pears (or 2 fresh pears)

¾ cup sultanas soaked overnight in tea

Method

  1. Preheat oven to 180C
  2. Beat sugar and oil together for 2 minutes with electric mixer or whisk.
  3. Gradually add eggs and beat well. Sift flour, baking powder, soda, cinnamon and ginger into sugar mixture.
  4. Add the pears and sultanas and mix until just combined. Grease and line a 22cm round cake tin.
  5. Cook for 50-60 minutes
