Recipe of the Month | Chicken and Vegetable Casserole

This recipe is the perfect dish for the cold weather we’re seeing right now. Super easy to prepare, this casserole will satisfy the whole family!

Ingredients:

3 teaspoons garlic
1 leek, diced
1 carrot, diced
1 whole celery, diced
Nutalex
500g diced chicken
¼ jap pumpkin
½ cup peas
½ cup corn
½ cup chicken stock
1 can light & creamy evaporated skim mil
Fresh Thyme

Method:
Melt butter with a little oil and sweat off leak and garlic gently.
Add chicken and brown
Add diced vegetables and stock
Add skim milk and simmer until vegetables are soft
Add fresh thyme
(can add corn flour to thicken if required)
