Jenny’s Bendigo Hospital: Recipe of the Month

With Winter coming closer, we love this delicious Chicken, Broccoli and Brie Pot Pie. We hope you enjoy it as much as we do!

Ingredients

  • 2 Sheets of Puff Pastry or Gluten Free Pastry
  • 1 Tablespoons of Olive Oil
  • 1 Diced Onion
  • 1 Teaspoon Minced Garlic
  • 1 Bag Frozen Broccoli Florets
  • 125gm Brie Cheese
  • 500ml Milk or Soy Milk
  • 2 Tablespoon Corn Flour
  • 500gm Diced Chicken
  • Salt & Pepper

Method

  1. Pre-heat oven 180oc
  2. Grease a baking dish
  3. In a frying pan add oil, garlic & onion sautee
  4. For 5 minutes, add chicken a lightly brown
  5. In a saucepan bring milk to the boil & thicken with cornflour
  6. Fold chicken & brie through mixture
  7. Place in baking dish a top with pastry
  8. Bake for 20 minutes until golden brown
