Recipe of the Month | Chicken & Vegetable Soup

Ingredients

  • 2 diced chicken breasts
  • 4 diced carrots
  • 1 bunch of celery diced
  • 4 brown onions diced
  • 800g can crushed tomato
  • 1 tbs cushed garlic
  • 2 litres chicken stock
  • 1 litre water
  • 2 pkts rice noodles
  • Salt & pepper to taste

Method

  1. Prepare all ingredients ready to start.
  2. Brown off the chicken, onion and garlic together.
  3. Add the chicken & vegetables to a large pot, boil until vegetables are soft.
  4. Add the rice noodles and add salt & pepper to taste. Serve with toasted bread.
